RECIPE OF MAPPILAI SAMBA AVAL FRIED RICE

INGREDIENTS

  1. Mappilai samba Aval – 1 cup
  2. Fine chopped veggies – 1 cup (carrot,beans,potato,capsicum)
  3. Onion – 1
  4. Green chilly – 2 cut it into two
  5. Ginger and garlic – few fine chopped
  6. Salt for taste as required
  7. Sugar as required
  8. Oil as required
  9. Pepper powder – 1 tblspn

Method:

Heat oil in a pan, add chopped onion green chilly ginger garlic and fry well for 10 mins. Then add all the veggies salt sugar and mix well. Allow the veggies to cook well. Meanwhile wash the Aval well and soak in water for 5 to 10 mins. Once the vegetables is cooked squeeze out the water from Aval and add it to the veggies and mix well. Finally add pepper powder mix it and serve hot

RECIPE OF KUDO MILLET CARROT PULAV

INGREDIENTS:

  1. Carrot – 1 skin peeled and grated
  2. Coconut milk – 1st and 2nd milk
  3. Salt
  4. Ginger garlic paste – 1 tbspoon
  5. Kodo millet – 1/4 cup
  6. Bay leaf – 1
  7. Elachi, cinnamon and clove – each 2
  8. Green chilly – 1 cut it into 2
  9. Pudina leaves
  10. Ghee

Method:

Wash and soak kodo millet in water. Heat a cooker. Add ghee. When its hot add bay leaf, elachi, cinnamon and cloves. Fry for a min. Then add ginger garlic paste green chili and pudina leaf. Mix well and fry till raw smell goes. Then add carrot salt. Then add the millet and mix well. Now add the coconut milk mix well and cook til the millet is cooked well. Serve hot.

RECIPE OF MIXED VEGGIES DOSA AND TOMATO KETHUP

 

INGREDIENTS

  1. Dosa batter – 1 cup
  2. Mixed veggies – 1 cup
  3. Salt
  4. Oil
  5. Cheese
  6. Tomato chutney

Method:

Cut all the veggies like carrot beans all coloured capsicum into fine pieces. Mash boiled potato and green peas. In a pan add oil little onion and saute. Then add in all the veggies and mix well. Add little salt and very little pepper powder and mix well. Heat dosa pan and pour little Batter and spread it like a small round. Then spread some tomato chutney on top and then add the veggies as topping. On top of this grate some cheese/ panner. Cover it with a lid and cook in low flame.Once its cooked well you can take it to a plate and serve. No need to turn it back and cook.

 

Note:Instead of tomato ketchup, you can do this.Take tomato’s wash well. Take a pan with water and allow it to boil well. Then off the stop add the washed tomatoes and close the pan with a lid. After 1/2 an hour remove the tomatoes and peel out the skin. Cut it into 2 half remove the seed too with a knife. Then take all these tomatoes in a blender and grind it well. Don’t add water. After grinding take this paste in a pan and boil it. Add little sugar,chilly powder and turmeric powder. Cook well till the raw smell goes. Cool and store it in fridge. This can be used instead of tomato ketchup.

Cold Compresses

As soon as your baby develops a fever, the first thing to do is put a cool, wet washcloth on your baby’s forehead. As the water from the wet washcloth evaporates from the skin, it will draw the fever out and the temperature will come down quickly.

Put some cool tap water in a bowl.
Soak a clean washcloth in the water.
Wring out the excessive water, then place the wet cloth on the baby’s forehead.
Once the cloth warms, remove it and repeat again.
Do this until the fever has gone.
You can also use the damp washcloth to sponge areas like your baby’s armpits, feet, hands to reduce the temperature.

Note: Never use very cold or ice water, as it may cause the internal body temperature to increase.

Lukewarm Bath

A lukewarm bath will help relax a fussy baby and help regulate the body temperature. It will even help your baby sleep better, which is needed for faster recovery.

For babies younger than 6 months, give a lukewarm sponge bath 2 or 3 times a day.
For babies 6 months or older, give them a regular bath in lukewarm water a few times a day.
After each bath, dress your baby immediately.

Note: Never use very hot or cold water, as it may cause the internal body temperature to rise.

Breast Milk

For babies younger than 6 months old who have a fever, breast milk is very important. It offers a unique balance of nutrients that strengthens a baby’s weak immune system and is tailored to fight a baby’s illness.

Breast milk is quickly and easily digested. It will even keep a sick baby properly hydrated, which is essential for faster recovery.

Try to breastfeed your young baby frequently. If your baby refuses to nurse while experiencing a fever, try different nursing positions. You can keep the baby upright while breastfeeding to make your baby more comfortable during feeding sessions.
If your baby regularly refuses nursing, pump out the breast milk and feed it to your baby using a spoon or bottle.

Give More Fluids

For sick babies, it is important to increase fluid intake. Fluid will help cool them down and replace the fluid lost through sweating to prevent dehydration.

Dehydration may lead to various other complications and delay recovery.

Due to having a fever, babies may refuse large amounts of fluid at a time. So, try to give them smaller amounts more often.

Give oral rehydration solutions (either homemade or readily available in the market) along with lukewarm water to help replenish fluids and electrolytes.

Keep Your Baby in a Cool Place

When taking care of a sick baby, it’s important to keep a close eye on the room temperature. It should not be too hot or too cold.

Dress Your Infant Comfortably

Many parents make the mistake of bundling up their sick child with layers of clothes or extra blankets. This is something parents should avoiding doing, as it may keep the temperature from going down or even make it go higher.

Infants cannot regulate their temperature well, hence when bundled in layers, it will be harder for them to cool down once overheated. Too much clothing will even prevent radiating body heat into the surrounding air.

Dress your baby in one layer of lightweight clothing. If needed, use a light blanket when your baby is sleeping.

Also, keep your baby in a comfortable room, where the temperature is not too hot or too cool.

Foot Massage

Rubbing the soles of your sick baby’s feet with some warm oil is one of the best ways to calm your fussy baby. Apart from relaxation, it will promote better sleep, which is necessary for quick recovery.

Foot massage also helps regulate body temperature.

Rub some warm olive oil on the bottoms of your baby’s feet.
Apply gentle pressure on the soles with your thumbs.
Finally, give a nice massage to the whole foot.
Do this for just a couple of minutes and repeat as needed.
When it comes to foot massage, be careful not to do too much.

Basil

For bringing down a fever, basil is suitable for babies older than 1 year. The herb can help reduce the heat in the body. It works as a natural antibiotic and immune booster.

Boil a handful of basil leaves in 2 cups of water, until the solution is reduced to half. Add a little sugar and give it to your little one, a few times a day.
If your baby is big enough to chew basil leaves, give him or her some thoroughly washed basil leaves to chew at regular intervals.

Monitor Body Temperature

Another important thing when your baby is having a fever is to regularly monitor his or her body temperature with a thermometer.

Remedies for cold and cough:
Camphor

Heat coconut oil and add little powdered camphor in it. After it has cooled, pour 4 to 5 drops to your palm and apply it evenly over the chest of your little one. Please take care to use very little camphor as it may irritate the baby skin.

Eucalyptus oil

Allow the baby to inhale the eucalyptus oil.The oil can be also be sprinkled in the baby beddings.

Turmeric

For infants, take a dried turmeric piece and burn it in a candle or diya flame, allow the infant to inhale the smoke from the burning turmeric for a minute. The smoke arising from the burning turmeric will be like a thread only, so no fear of smoke inhalation!!!
For kids above 2 years, a little turmeric can be added to milk and given.

Garlic

Peel the skin of 2 garlic pods and allow them to steep in 50 ml of hot water for 10 minutes. Let it cool, feed 2 sips of the garlic water to your little one every 2 to 3 hours. This can be done for kids above 4 year.

Ginger

Ginger thins out the mucus and so is very helpful for treating blocked nose. Grate a small piece of ginger and add it to hot water and allow it to cool for about 10 min. This can be given to children above 2 years.

Chicken soup

Clear chicken soup can be given from 8 Month onwards.

Tulsi/Basil leaves

Tulsi leaves have great medicinal properties, they can be either added to water or milk. Allow them to soak in water for more than a hour and feed the water in sips to kids above 2 years.

Honey

For Babies above 1 year, a half a teaspoon of honey can be added to the milk and given twice a day.

Ajwain

Roast Ajwain on low flame in a pan, wrap it in a kerchief to make a potli and allow the kid to inhale it or hold it near the nose of infants.

Lemon

Lemon is rich in Vitamin C and helps in developing immunity. For babies above 1 year, mix lemon juice with honey and lots of water.

Cinnamon

Cinnamon has an antioxidant effect and acts as an effective antibacterial and antifungal agent. This can be given kids older than 1 years of age.
Mix 1 teaspoon of honey with 1/4 spoon of cinnamon, feed this mixture every 4 hours throughout the day when the first signs and symptoms of cold surface.

Mustard Oil

Mix 5 to 10 teaspoon of mustard oil with crushed garlic and ajwain seeds and tadka. After it is cooled, strain the mixture and store in a bottle. When needed, warm a little and apply on the child’s chest, forehead and throat.

Steam Inhalation

Never let the child do steam inhalation as done for adults. Fill the buckets or bathtub in the bathroom with piping hot water, hold the baby in the arms for 10 minutes in the steamy bathroom to thin out the phlegm.

Ghee

For dry cough, heat 2 tablespoon of ghee and add 2 to 3 pepper in it, grind it and give a little of it throughout the day. This can be given for children above 1 year.

Urud dal Jamoon

Ingredients:
White whole urad dal – 1 cup
Sugar – 1/2 cup
Water – 1 cup
Elachi – few crushed
Oil to fry

Method:
Wash and soak urad dal for 2 hours.
Then drain the water completely and add it to a grinder and grind well.
Sprinkle very little water. Once its grinded to a fine paste take out the batter to a bowl.
Heat oil in a pan. Take small balls out of this batter and put it into oil. After 5 mins turn it to the other side and allow it to cook well.
When its golden brown remove and add it to a plate and allow it to cool.

In a separate pan add sugar water and crushed elachi and boil well. When it has reached a syrup like consistency switch of the flame allow it to cool and add the fried jamoons.
After half an hour remove the jamoons from the syrup and serve.

Note:
While grinding batter just sprinkle very little water.
Sugar syrup should be thin in consistency. It should not be too thick.

Bamboo Rice Payasam

Ingredients:
Bamboo rice: 1/4 cup
Palm jaggery: 1/2 cup
Elachi,cashew,kismis: as required
Thick coconut milk: 1 cup
Moong dal – 2 tblspoon
Ghee – as required

Method:
Wash the bamboo rice and moong dal well. Soak the rice and dal for around 1 hour.
Then add all these to a cooker and pressure cook it for 6 whistle and then allow it to cool.

Meanwhile take palm jaggery in a pan add half glass of water and heat it. Once the jaggery melts completely remove it from flame and filter it.

Then add this jaggery syrup to the cooked rice and mix well. Add the coconut milk and cook for 2 mins and then switch off the flame.

In a pan melt ghee then add cashew and kismis and fry till golden color. Then add this to the cooked payasam. Add little crushed elachi.

Serve it hot or cold.
Note:
After soaking the rice, take the rice in a mixer and grind it twice and then can be cooked with dal.

Apple Aval Payasam

Ingredients:

Apple – 1 peel skin and grated
Poha – 4 tablespoon dry roast and grind to a fine powder
Milk – 2 cups
Water – 1 cup
Palm sugar – 1 tbspoon
Ghee

Method:
Take grated apple in a pan and saute it till the water in it evaporates. This take around 3 mins.
Then add the powdered Aval and mix well.
Pour milk and mash it well.
Add palm sugar and mix everything well.
Then add water and allow the contents to cook well. At last add ghee.

Any type of Aval can be used to make this recipe

Rasam for Stomach Upset

Ingredients:
Tamarind – small lemon size
Water – 3 cups
Ajwain – 2 tablespoon
Turmeric powder – a pinch
Salt curry leaf – as required
Oil
Red chilly – 2 broken into pieces
Coriander seeds – 2 tablespoon

Method:
In bowl take water add tamarind, ajwain, turmeric powder, salt , curry leaves and coriander leaf and boil nicely.
Meanwhile take a pan add little oil and heat it. Then add mustard seeds, curry leaves, red chilli, coriander seeds and fry well. Then pour this seasonings in the boiled water and mix well.

Dates Poha Kheer

Ingredients:

2 tablespoons thin poha/beaten rice

1-2 seedless dates (If you do not have seedless dates, then use a knife to remove the seed from the dates)

1/2 cup baby’s milk

Water as needed

Method

Wash the poha in drinking water nicely and then keep aside. Drain all the water as the residual water will be enough to soak the thin poha enough.
Chop the dates into very fine pieces.
Heat a pan and add half cup water into the pan.
When the water in a little hot, add the finely chopped dates to water.
Keep stirring in between and let the dates cook and disintegrate completely. This will take 3-4 minutes.
When dates are cooked, add soaked poha and mix well.
Now add baby’s milk as needed and turn off the heat.
Mix every thing well and serve.
The dates give a lovely subtle sweetness to this kheer and make it even more nutritious.

This recipe can be made with normal and traditional poha varieties like Mappilai samba, karuppu kavuni, and other millet pohas/aval.

Ragi Kara kozhukattai

Ingredients:

Ragi flour – 1 cup
Grated coconut – 1/4 cup
water – 4  tbsp
Salt – 1/4 tsp

For seasoning:

Mustard seeds – 1/2 tsp
Green chilli – 1
Urad dall and Bengal gram – 1 tblspoon each
Curry leaves

Method:

Dry roast ragi flour for 2 to 3 minutes on medium flame. Allow it to cool a little.
Take ragi flour, salt, grated coconut in a bowl and mix well.
Sprinkle water and make a dough out of it.
Make sure not to pour more water in the starting. Just in between sprinkle water and make a dough out of it.

Take small ball from the dough and make dumplings with hands.
Steam the dumplings in idli cooker for 15 mins.
Season with mustard seeds, green chilli, urad dal, Bengal gram and curry leaves.
